CHEF SOM FROM KARMAKAMET CONVEYANCE TAKES THE DINER ON A VOYAGE OF FLAVOURS
Chef Jutamas “Som" Theantae, one of Thailand’s most esteemed female chefs, together with her expert kitchen team have gave life to a refined yet emotionally-charged and thought-provoking menu for a much anticipated new fine dining venue located in Sukhumvit soi 49.
Opened on November 27, Karmakamet Conveyance’s Tasting Menu is the cumulative work reflecting Chef Som’s culinary philosophy and experience throughout her years. Each course is a sophisticated patchwork of fresh and transformed ingredients, to which Chef Som retains flavours in their truest form to present familiar comfort-food inspired dishes. An advocate of simple, pure and natural ingredients rather than extravagant food trends, Chef Som manages to elevate the most humble of produce.
The menu gives away very little, displaying only the names of each course such as ‘Grains’, ‘Warmth’, ‘Rainforest’, ‘Village’, ‘Life’ followed by a short and mysterious description. Diners are encouraged to approach the tasting menu with an open mind, to set aside any preconceived notions and discover the story of flavours hidden within. As they reveal themselves, the diners may find that thoughts, feelings, and memories, not typically associated with what is seen on the plate, suddenly emerge.
“If you compare it with art it’s like oil painting," chef Som said. “You put layers after layers. And that’s the taste you have in your mouth." Despite her references to art, her food isn’t empty aesthetics. “Appearance doesn’t have to follow trends. The world is too much about appearance and that bothers me. It has to be honest. And that’s true for everything in life."
